Frosted Banana Cookies

3/4 c. shortening or butter
1 egg
1/2 tsp vanilla
1/4 tsp salt
3/4 c brown sugar
1 tsp soda
2 mashed bananas
2 c flour

Cream together shortening and sugar.  Add in egg and vanilla.  Mix in dry ingredients, then bananas.  Bake at 350 degrees for about 10 minutes.  Cool and frost.  Makes 3 dozen.



Frosting:
3 TBS brown sugar
3 TBS cream or milk
3 TBS butter

Bring to a boil and remove from heat.  Add 1/2 tsp vanilla and enough powdered sugar to spreading consistency.

Joan's Oklahoma Chocolate Cake

Bring to a boil in a large saucepan:
          1/2 c unsweetened cocoa
          1 c water
          2 sticks of margarine
Remove from heat and add:
          1/2 c buttermilk (Can use 1/2 c milk mixed with 1/2 tsp lemon juice that has sat out for 5 min)
          2 eggs
          1 tsp vanilla
Mix together and add to the above:
          2 c flour
          2 c sugar
          1 tsp baking soda

Bake at 350 degrees for 15 minutes in a greased cookie sheet.  Frost when cooled.



Frosting:

Bring to boil:
          1 stick butter
          1/3 c unsweetened cocoa
          6 TBS buttermilk

Add:
          1 pound powdered sugar
          1 tsp vanilla

Wait until mostly cooled, then pour over cake.

Heidi's Caramel Pineapple Cake

2 c. flour
1/2 c. sugar
1 tsp. baking soda
2 eggs
1 (20-oz.)can crushed, undrained pineapple
1/2 c. brown sugar
1.2 c. chopped nots
1 tsp. vanilla
3/4 c. evaporated milk
3/4 c. butter 
3.4 c. sugar

Using a spoon stir together the flour, sugar, soda, eggs, and crushed pineapple in a bowl. Put batter into an ungreased 9 X 13 dish. Sprinkle 1/2 c. brown sugar and 1/2 c. nuts over top. Cook for 20 mins at 350. While cake is cooking combine Vanilla, evaporated milk, butter, and sugar in a small saucepan. Bring to a boil and boil for 5 minutes. Remove cake from oven and immediately poke lots of holes though the cake. Pour the hot caramel sauce all over and into holes. Best served warm with ice cream. 

Ultimate Chocolate Chip Cookie n' Oreo Fudge Brownie Bar

1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 tablespoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) milk chocolate chips
1 pkg double stuffed Oreos
1 family size (9x13) Brownie mix
1/4 cup hot fudge topping

Preheat oven to 350 degrees F. Cream the butter and both sugars in a large bowl with an electric mix on medium speed for 3-5 mins. Add the eggs and vanilla and mix well to thoroughly combine. In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined. Stir in chocolate chips. Spread the cookie dough in the bottom of a 9x13 baking dish that's been lined with wax paper and sprayed with cooking spray. Top with a layer of Oreos. Mix together brownie mix, adding an option 1/4 cup of hot fudge topping to the mix. Pour the brownie batterover the cookie dough and Oreos. Cover with foil and bake at 350 degrees F for 30 mins. Remove foil and continue to bake for an additional 15-25 mins. Let cool completely before cutting. Brownies may still be gooey in the middle when still warm, but will set up perfectly once cooled.

Soft Easy Sugar Cookies

Ingredients:
  • 3 3/4 cups all-purpose flour'
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup margarine, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 tsp vanilla extract
Directions:

1.  Cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually add in the dry ingredients until fully absorbed. Cover dough, and chill for 2 hours. 

2.  Preheat oven to 400 degrees. Grease cookie sheets. On a clean floured surface, roll out dough to 1/4 inch thickness and cut out shapes with cookie cutters.

3.  Bake 6-8 minutes in the preheated oven.  Remove from cookie sheets to cool on wire racks.

Judy's Pumpkin Roll

Cake:
1/2 cup powdered sugar (to sprinkle on towel)
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup pumpkin
3/4 cup flour
1/2 teaspoon cinnamon
3 large eggs
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1 cup powdered sugar

Filling:
1 package cream cheese, softened
6 tablespoons butter or margarine, softened
1 cup powdered sugar
1 teaspoon vanilla extract

FOR CAKE: Preheat oven to 375 degrees.  Line a cookie sheet with wax paper. Grease (cooking spray) the wax paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.  COMBINE flour, baking powder, baking soda, cinnamon, cloves, and salt in a small bowl.  Beat eggs and sugar in large mixer bowl until thick.  Beat in pumpkin.  Stir in flour mixture.  Spread evenly into prepared pan.  BAKE for 13 to 15 minutes or until top of cake springs back when touched.  Immediately loosen and turn cake onto prepared towel.  Carefully peel off paper.  Roll up cake and towel together, starting with narrow end. 

FOR FILLING: BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth.  Carefully unroll cake; remove towel.  Spread cream cheese mixture over cake.  Re-roll cake.  Wrap in plastic wrap and refrigerate at least one hour.  Sprinkle with powdered sugar before serving if desired. 
Note: Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.  I always put a ton on.  This is also great to freeze and eat a piece at a time.  I just double wrap it in aluminum foil. 

Cinnamon Swirl Cake

1 yellow cake mix
3 T flour
8 oz. sour cream
1 large vanilla pudding mix
3/4 c oil
4 eggs
3/4 c water

Mix altogether (don't over mix).  Cake mixture will be thick.

Mix in cup:
1/2 c. sugar
4 tsp. cinnamon

Spray bunt pan well.  Coat entire pan with cinnamon mixture.  Put about half the cake mix in pan.  Sprinkle in the majority of the cinnamon mixture.  Add rest of cake mix and top with remaining cinnamon mixture.  Bake at 350 degrees for 50-55 minutes. 

Alex's SOFT Sugar Cookies

3 c powdered sugar
2 c butter softened
2 t vanilla
1 t almond extract
2 egg
5 c flour
2 t baking soda
2 t cream of tarter

Mix powdered sugar, butter, vanilla, almond extract and egg. Stir in remaining ingredients. Let set in fridge at least four hours (I usually just do overnight). Roll and cut.  Heat oven to 375 degrees and bake 7-8 minutes.

Frosting:
1 pkg softened cream cheese
4 T butter
1t vanilla
Blend together, then add 4 c powdered sugar and mix (I also like to add just a touch of almond extract to the frosting)

Magic Peach Cobbler

1 stick margarine
1 cup flour
1 1/2 t baking powder
1 cup sugar
3/4 cup milk
1 quart peaches sliced and drained

Melt butter in a 9x13" pan.  Mix together sugar, flour and baking powder.  Stir in milk (don't stir very much).  Pour on top of butter.  Put peaches on top.  Bake at 350 degrees for 35 minutes.  Top with ice cream, whipped cream, or milk.

Anne Bowen's Pumpkin Cake

Yellow or Spice cake mix
Small package of vanilla instant pudding
2 eggs
2 cups pumpkin
3/4 cup water
1/2 tsp cloves
1/2 tsp ginger
1 1/2 tsp cinnamon
1 tsp lemon juice
1 tsp vanilla
1/4 tsp baking soda

Mix all together and bake at 350 degrees for 30-40 in a 9x13 glass dish.

Topping:
1/2 pint whipping cream
1/2 cup brown sugar

First whip the cream, then add the brown sugar. Add 8 oz. cool whip, mix and spread over cake then sprinkle a little cinnamon on top.

Neiman-Marcus Cookie

1 1/2 cups butter
3 cups flour
1 1/2 tsp. soda
1 1/2 cups sugar
4 1/4 cups blended oatmeal **
24 oz semi sweet chocolate chips
1 1/2 cups brown sugar
1 tsp. salt 3 eggs
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla

Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips. Bake for 10 minutes on greased cookie sheet at 375 degrees.

**measure oatmeal and blend in blender to a fine powder.

Almond Poppy Seed Cake

1 box yellow cake mix
1 sm. box instant vanilla pudding
4 eggs
1 C. hot water
1/2 C. oil
1 tsp. almond extract
2 T. poppy seeds

Bake 35 minutes at 350 degrees in a well greased bundt pan. Glaze with 3/4 C. powdered sugar and 2 T. water.

Turtle Cookies (aka Waffle Iron Cookies)

2 Eggs, beaten
3/4 c Sugar
1/2 c Margarine, melted
1 tsp Vanilla
3 Tbs Cocoa
1 c Flour

Preheat waffle iron. Mix eggs, sugar, margarine, and vanilla. Add cocoa and flour. Drop good-cookie-sized spoonful onto each square of waffle iron. Cook 2-3 minutes. Remove and cool a bit. Ice heavily while still warm.

Turtle Frosting:
2 c Powdered Sugar
3 Tbs Cocoa
2 Tbs Margarine
4 Tbs milk
1 tsp Vanilla

Yummier Rice Krispie Treats

13 oz Rice Krispie Cereal
Large Pkg. Marshmallows
1 Cube Butter

Melt marshmallows and butter in a large pan. Add Rice Krispies and stir until well coated. Spread half of the mixture in a buttered pan. Sprinkle with chocolate chips and more marshmallows.

Melt:
1 Pkg. Caramels
1/2 Cube Butter
1 Can Sweetened Condensed Milk

Pour over chocolate chips and marshmallows. Spread remaining Rice Krispie mixture on top. Delicious! (but really, with those ingredients, how could you go wrong? :)

Kathryn's Fudge Brownies

2 c sugar
2/3 c cocoa
2/3 c  melted butter
4 eggs
1/2 tsp salt
1 1/2 c flour
1 tsp baking powder
2 tsp vanilla
2 c chopped nuts

Bake in a 9x13 greased pan at 350 for 25 minutes (or double it and put it in a jelly roll pan) Delicious!

Margene’s Carrot Pudding

1 C.  sugar                                                               
1/2 C. butter
1 C. carrots, grated       
1 C. potatoes, grated
1 C. bread crumbs 
1 C. nuts, chopped 
1 C. dates or raisins
1 C. flour, sifted 
1 tsp. soda
1 tsp. nutmeg
1 tsp. cinnamon 
1 tsp. salt
1/2 tsp. cloves                                                                                                                                                                                                          
Cream butter and sugar then add the remaining ingredients.  Steam for 3 hrs.  Serve with Brown Sugar Sauce.
Brown Sugar Sauce

1 C.  brown sugar
1/2 cube butter
2 T.  flour
2 C. boiling water
1 tsp.  vanilla
Mix sugar and flour together.  Add butter and boiling water.  Cook until thick.  Add vanilla.  Serve over carrot pudding.

O'Henry Bars

2 C sugar
2 C corn syrup
2 C peanut butter
8 C rice krispies
1 12 oz pkg chocolate chips
1 12 oz pkg butterscotch chips

Bring corn syrup and sugar to a boil. Remove from heat and add peanut butter. Mix well. Spread in a large cookie sheet. Melt chocolate and butterscotch chips (careful to not burn). Spread over the top of the rice krispie mixture.

Curt's Apple Crisp

In 9 x 13 pan:

1 can pineapple slices, drained
1 qt apple pie filling

Crumble over top, 1 cube butter & 1 white cake mix

Bake at 350 for 30 min. Serve with ice cream or whipped cream.

Mary Ann's Rootbeer Ice Cream

2 liters or 5 cans of Rootbeer
1 pt whipping cream
2 cans sweetened condensed milk
1 tsp vanilla

Mix together and freeze.
